Tomato Stuffed Portobello Mushrooms

I decided that I wanted stuffed mushrooms the other night and decided to see what I could come up with to make it completely different from my normal way. I ended up liking these so much, I will be having them for dinner again tonight!

Ingredients

  • 4 large Portobello Mushrooms
  • 2 Large Tomatoes (diced)
  • 15 leaves fresh Basil
  • 1/2 cup uncooked quinoa
  • 6 oz Goat Cheese (I used one that had basil in it)
  • 1 Clove Garlic

I start the oven at 350°. Prepare quinoa according to directions on the package. Spray a pan with cooking spray. Chop the Basil, dice the tomatoes and mince the garlic. Mix the tomatoes, basil, garlic, and Goat Cheese, and quinoa together. Place the mushrooms in your pan and then stuff them with your ingredients. I cover the pan with aluminum foil and then bake for 25 – 35 minutes depending on the size.
