A healthy way to get the delicious taste of pizza, you can enjoy this as a meal or as a side dish!
4 medium zucchini
1/2 cup mozzarella, freshly shredded
1/4 cup grated parmesan
1-pint cherry tomatoes, sliced
1/2 cup Italian breadcrumbs
1 large clove garlic, minced
1 Tbsp. olive oil
salt and pepper, to taste
Cut the zucchini lengthwise in half. Trim a little bit off the bottom and brush the surface with olive oil.
Scoop out the centers where the seeds are. Mix the olive oil, garlic, salt, and pepper and brush the surfaces of the zucchini with it. Sprinkle breadcrumbs in the centers and place Place the tomatoes on top.
Bake in a preheated 350ºF oven for 30 minutes. Add the mozzarella in between the tomatoes. Place in the broiler until the cheese is melted and bubbling. Sprinkle some parmesan and olive oil on top.
