Flour-less Peanut Butter Cookies

This lovely Monday evening I have for you guys Peanut Butter Cookies. If you had a wonderful Monday then that is great but if you are the majority that hates Mondays and wants to kick Monday’s butt then hopefully these cookies will make your day better! This ingredient list shouldn’t make you go run for the door, there are only six and you would normally have them in your pantry already, how great is that? And, you don’t need flour which equals less of a mess. At least in my kitchen, it does. Enough of my babbling I’m sure most of you already skipped ahead just to read the recipe. If not, thank you for reading this paragraph that took me approximately ten minutes to write. I hope everyone had a wonderful weekend and here is a start to a possibly amazing week!

Ingredients

2 cups peanut butter
2 cups white sugar
2 eggs
2 teaspoons baking soda
1 pinch salt
1 teaspoon vanilla extract

Directions

1. Preheat oven to 350 degrees F. Grease Cookie Sheet
2. In a medium-sized bowl, stir peanut butter and sugar together until smooth. Beat in the eggs one at a time, then stir in the baking soda, salt, and vanilla. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheet. Press a criss-cross into the top using the back of a fork.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool.

I have always wondered why peanut butter cookies have the criss-cross with the fork on top. Does anyone know why? Please let me know!
